Castell d'Or 'Dau Set' Cava

Grapes — Xarel·lo, Macabeu, Parellada

Region — Penedès, Catalonia, Spain

Tasting Notes — Pale gold with a fine, persistent bead. Ripe green apple, pear, and lemon zest on the nose, with a whisper of white flowers and a touch of brioche from time on the lees. The palate is crisp and refreshing — bright citrus acidity, good minerality, and a clean, dry finish. Honest, unpretentious, and very easy to love.

The Wine — A classic Cava blend of Catalonia's three native varieties, grown on organically farmed vineyards across the Penedès, Conca de Barberà, and Alt Camp. Vinified using the traditional method — second fermentation in bottle, aged on the lees in underground cellars at a constant cool temperature before riddling and disgorgement. Vegan, with no animal-derived fining agents used at any stage.

Farming — Certified organic. All grape varieties are farmed without synthetic pesticides, herbicides, or chemical fertilizers, with an emphasis on preserving soil fertility and protecting the natural environment across the cooperative's diverse growing areas, which range from coastal lowlands to vineyards at 500 meters of elevation.

Winemaking — Each variety is harvested and fermented separately before blending. Second fermentation takes place in bottle per the traditional method, with a minimum of 14 months of lees contact. No animal-derived fining agents.

The Producer — Castell d'Or is not a single winery — it is a collective of 16 historic Catalan cooperatives, united in 2006, representing more than 2,200 farming families working over 6,200 hectares across some of Catalonia's most important wine-growing zones. The oldest of these cooperatives dates to 1894, and together they carry over a century of accumulated farming knowledge and tradition. Buying Castell d'Or is buying into a model where the farmer is the direct beneficiary — a community-rooted approach to winemaking that sits quietly at odds with the individualism of most premium wine production. 'Dau Set' is their entry point: an accessible, organically farmed Cava that delivers quality and integrity at a price that makes it genuinely hard to say no.
