Ovum Wines 'PNK Salt'

Grapes — 100% Cabernet Sauvignon

Region — Columbia River Gorge, Oregon

Tasting Notes — Glowing watermelon pink in the glass. Salted strawberries, candied cherry, and a whisper of bubblegum on the nose — playful but not frivolous. The palate is bone dry with a mineral-driven crunch, bright acidity, and that signature salty finish that makes you reach for another pour before you've thought about it.

The Wine — Free-run juice only from certified organic Cabernet Sauvignon, sourced from cool-climate sites in the Columbia River Gorge. Inspired by the beach-dwelling spirit of their flagship Big Salt white, PNK Salt applies the same low-intervention philosophy to a dry rosé — light on its feet, serious underneath.

Farming — Certified organic fruit sourced from trusted grower partners across Oregon whose farming practices align with Ovum's values. No pesticides, no herbicides, no synthetic inputs.

Winemaking — Native yeast fermentation, extended lees contact, neutral vessels only — acacia, oak, and concrete egg. No fining, no filtration, minimal added sulfur. Winemaking at Ovum is deliberately uniform across all wines so that what's in your glass is vineyard and vintage, not winemaker fingerprint.

The Producer — Founded in 2011 by Ksenija Kostic House and John House, Ovum set out to prove that Oregon could produce world-class white and rosé wines built on transparency and terroir. Ksenija — Serbian-born, classically trained, and fiercely independent — is the winemaker and creative vision behind every bottle. Her philosophy is disarmingly simple: find great farmers, get out of the way, and let the place speak. Note: the Big Salt brand (under which PNK Salt is produced) was acquired by Jackson Family Wines in 2025. The bottles we carry are from pre-acquisition vintages, when Ovum was fully independent.
