Grapes — Xarel·lo, Macabeu, Parellada

Region — Penedès, Catalonia, Spain

Tasting Notes — Pale gold with a fine, persistent bead. Green apple, lemon zest, and white flowers on the nose, with a whisper of brioche from time on the lees. The palate is crisp and refreshing — bright citrus acidity, clean minerality, and a dry, honest finish. Straightforward and delicious, and exactly what it's meant to be.

The Wine — A classic Catalan Cava blend of the three native varieties, grown on organically farmed vineyards across the Penedès, Conca de Barberà, and Alt Camp. Made using the traditional method with second fermentation in bottle and a minimum of 14 months of lees contact. Vegan, with no animal-derived fining agents used at any stage.

Farming — Certified organic across Castell d'Or's network of cooperative growers, farming without synthetic pesticides, herbicides, or chemical fertilizers across diverse growing areas ranging from coastal lowlands to vineyards at 500 meters of elevation.

Winemaking — Each variety is harvested and fermented separately before blending. Second fermentation takes place in bottle per the traditional method, with careful riddling and disgorgement. Clean, honest winemaking with no animal-derived fining agents.

The Producer — Castell d'Or is a collective of 16 historic Catalan cooperatives, united in 2006, representing more than 2,200 farming families working over 6,200 hectares across Catalonia. The oldest of these cooperatives dates to 1894. This is a large-scale operation by the standards of our list — but the organic farming is genuine, the traditional method winemaking is sound, and the cooperative model means the farmer is the direct beneficiary of every bottle sold. We carry 'Dau Set' as our house Cava — the backbone of our sparkling cocktail program — and at this price point, with these farming credentials, it's a no-brainer. Ask us what we're mixing with it.
