Domaine Léon Boesch 'Zéro' Crémant d'Alsace Extra Brut
Grapes — Pinot Blanc, Riesling, Pinot Gris, Pinot Noir
Region — Vallée Noble, Westhalten, Alsace, France
Tasting Notes — Pale gold with a fine, persistent bead. Buckwheat, pear compôte, and lemon zest on the nose, with notes of apple blossom, honeysuckle, and a whisper of warm brioche from the lees aging. The palate is tense, linear, and bone dry — crisp acidity, green apple, pear, and yellow grapefruit with a lingering, elegant finish that stays clean and pure. This is sparkling wine with nowhere to hide and nothing to hide — exactly as described by the producer: bubbles in their simplest, most honest expression.
The Wine — A zero-dosage Crémant from the estate's Demeter certified biodynamic vineyards in the Vallée Noble — a protected valley at the foot of the Petit Ballon mountain, sheltered from westerly rain by the Vosges range and blessed with a near-Mediterranean microclimate where almond trees, cicadas, and green lizards share space with some of the finest vines in Alsace. Aged 12 months in large oak foudres to develop richness and texture, then bottled for a minimum of 18 months on lees before disgorgement. Zero dosage: no sugar added at any stage. The name says it all.
Farming — Demeter certified biodynamic across all 13 hectares of estate vineyards. The Boesch family has farmed organically since 2000 and biodynamically since Matthieu returned to the domaine in 1999. All vineyard work is done by hand — ploughing, natural treatments made from herbal teas and biodynamic preparations, compost produced on the estate. The vineyards have become a genuine wildlife sanctuary: birds nesting, bees building hives, fawns resting in the shade of the vines. That is not marketing language — it is the observable result of 25 years of farming without synthetic inputs.
Winemaking — Pressing is slow and gentle (8 to 12 hours). Indigenous yeasts only — never commercial strains. Malolactic fermentation allowed to occur spontaneously rather than being blocked by sulfur addition, which Matthieu believes allows for better exchange between the fine lees and the wine. Sulfur added only in small doses before bottling. Aged 12 months in large oak foudres, then 18+ months on lees in bottle after secondary fermentation. Disgorged without any dosage — zero added sugar, zero compromise.

The winery itself was rebuilt in 2010 using only local natural materials — an eco-friendly facility that reflects the same respect for the land that governs every vineyard decision. On the Grand Cru Zinnkoepflé, Matthieu has been known to downgrade perfectly good Riesling, Pinot Gris, and Muscat — wines that could command Grand Cru prices — because he believes the Gewürztraminer expresses that terroir most honestly.
