Grapes — 100% Pinot Noir
Region — Maranges, Côte de Beaune, Burgundy, France
Tasting Notes — Beautiful ruby with a violet glint. Red cherry, raspberry, and wild strawberry on the nose, with violet florals and a whisper of earth underneath. The palate is refined and precise — delicate, fine-boned structure, bright acidity, and a gentle woodiness from the oak aging that adds depth without dominating. The Wine — 100% Pinot Noir from the Aubuzes climat in Maranges — a village appellation on the southern tip of the Côte de Beaune, bordering Santenay, where old vine fruit from Girardin's holdings produces wines of real character and surprising depth at a fraction of the price of their more celebrated neighbors up the road. Vines average 50 years old. The "Vieilles Vignes" designation is well-earned.
Farming — Organically farmed in practice across all 17 hectares of the estate — no synthetic pesticides, herbicides, or chemical fertilizers. Not formally certified, but consistently described by importers and critics as farmed with full organic commitment. Triple sorting: twice in the vineyard, once on a sorting table at the winery. Manual harvest throughout.
Winemaking — Destemmed and placed in vat at 12°C for a 5-day cold pre-fermentary maceration to extract primary aromas before fermentation begins. Indigenous yeasts only — never a cultivated strain. Smooth extraction over approximately 20 days, carefully monitored to respect the grape, the terroir, and the vintage. Aged 15 months in French oak barrels from Allier and Vosges forests with no new oak whatsoever — all neutral vessels, chosen to add gentle structure without imprint.
